Joining forces with our team to whip up a new special, chef Amit Pandeli creates his twist on a Bombay keema omelette, giving him the chance to bring his authentic Indian flavours to an enthusiastic new crowd. This dish stands out with its perfectly balanced ingredients and opts for subtle spices, sautéed onions, bell peppers, fresh coriander, and a hint of green chilli. Plus, the game-changer? A Peshawari-style keema, a slow-cooked minced lamb bursting with flavour.
Amit’s culinary adventure started in 2003, learning the ropes from his father, a legendary Mughlai and Shahjhani chef. His father’s impressive resume includes top spots like Claridge’s Delhi and Air India’s international flight kitchen. But a secret weapon in the Pandeli family’s arsenal is the spice blend, a recipe passed down through generations. Spending the last six years perfecting this blend, Amit achieved one of his proudest moments: launching a range of simmer sauces in the UK, turning a long-time family dream into reality. Following this success, he’s currently working on a highly anticipated line of artisan meals that promise to set a new standard in the market. Strengthening the family legacy with appearances on Gordon Ramsey’s Future Food Stars and subsequently moving to Malvern to hone his craft and experiment in a tranquil, uninterrupted setting, Amit has taken the family’s rich culinary heritage and given it a fresh twist.
Looking ahead, Amit envisions more collaborations with Eggbreak, teasing us with talks of a Delhi butter chicken or a spiced aromatic buttermilk fried chicken hitting the brunch scene. His culinary style, rooted in North Indian and Mughlai traditions, also pulls in flavours from French and Cantonese cuisines, so we can look forward to dishes that are both nostalgic and modern, opening an endless scope for his creations.
